A classic Potato Dish. Golden brown on the out side and soft and tender on the inside cut it into wedges and served with any entree. Cooked and grated potatoes then cooked again with clarified butter and seasoned with fresh herbs. This is a great preparation of potatoes that is well worth the preparation.


  • 5  Each Idaho Potatoes
  • 1
  • 5  Fluid ounce(s) Clarified Butter
  • 2
  • 1  Table Spoon(s) Fresh Thyme, chopped fine
  • 3
  • 1  Table Spoon(s) Fresh Oregano, chopped
  • 4
  • 1  To Taste Salt and Pepper

    1. Simmer the whole potatoes skin on until they are almost fully cooked, about 45 minutes
    2. Let cool then peel off skin
    3. Grate the cooled potatoes on the largest side of your Box grater
    4. Season the grated potatoes with salt, pepper and the herbs
    5. Heat saute pan and add half the clarified butter
    6. Add grated potatoes and press and form them into the pan
    7. Add some butter around the out side as needed
    8. Once golden brown on one side, flip and cook the other until the same color is achieved
