Description

Fresh Ratatouille a mixture of stewed eggplant, zucchini, onions, peppers, tomatoes, and fresh herbs seasoned to perfection. It can be used as a side dish & is also a great filling for a vegetarian omelet.


Ingredients

  • 1  Each Eggplant, large cubes
  • 1
  • 4  Each Zucchini, large cubes
  • 2
  • 8  Each Baby Bell Peppers, large dice, or 2 bell peppers
  • 3
  • 1  Each Onion, large dice
  • 4
  • 1/4  Cup(s) Olive Oil
  • 5
  • 1  Table Spoon(s) Kosher Salt
  • 6
  • 1  Tea Spoon(s) Black Pepper
  • 7
  • 4  Cup(s) Tomato, peeled, large dice
  • 8
  • 3  Each Thyme Sprig
  • 9
  • 1  Each Rosemary Sprig
  • 10
  • 2  Table Spoon(s) Oregano, chopped
  • 11
  • 2  Table Spoon(s) Italian Parsley, chopped

Directions

    1. In a large pot, heat up olive oil and add vegetables
    2. With butchers twine, tie up the thyme and rosemary and add to the vegetables
    3. Peel and large dice tomatoes and add to the pot
    4. Season with salt and pepper
    5. Cook out for 25 minutes or until the eggplant is tender
    6. Taste and adjust for seasoning
    7. When vegetables are tender, turn off heat and mix in the oregano and parsley
    8. Taste and adjust with salt and pepper if needed
    9. Serve and enjoy!
