Ratatouille

Description
Fresh Ratatouille a mixture of stewed eggplant, zucchini, onions, peppers, tomatoes, and fresh herbs seasoned to perfection. It can be used as a side dish & is also a great filling for a vegetarian omelet.
Ingredients
- 1 Each Eggplant, large cubes
- 4 Each Zucchini, large cubes
- 8 Each Baby Bell Peppers, large dice, or 2 bell peppers
- 1 Each Onion, large dice
- 1/4 Cup(s) Olive Oil
- 1 Table Spoon(s) Kosher Salt
- 1 Tea Spoon(s) Black Pepper
- 4 Cup(s) Tomato, peeled, large dice
- 3 Each Thyme Sprig
- 1 Each Rosemary Sprig
- 2 Table Spoon(s) Oregano, chopped
- 2 Table Spoon(s) Italian Parsley, chopped
Directions
- In a large pot, heat up olive oil and add vegetables
- With butchers twine, tie up the thyme and rosemary and add to the vegetables
- Peel and large dice tomatoes and add to the pot
- Season with salt and pepper
- Cook out for 25 minutes or until the eggplant is tender
- Taste and adjust for seasoning
- When vegetables are tender, turn off heat and mix in the oregano and parsley
- Taste and adjust with salt and pepper if needed
- Serve and enjoy!
