Rigatoni a la Vodka with Chicken & Sun Dried Tomatoes

Description
This Rigatoni a la vodka recipe is an easy and delicious dish that's always a big hit. Rigatoni with with a creamy tomato sauce, sauteed chicken, and sun-dried tomatoes.
Ingredients
- 1 Pound(s) Rigatoni, cooked al dente
- 1/2 Cup(s) Prosciutto, sliced and diced
- 1 1/2 Pound(s) Chicken, diced 1/2" cubes
- 1/2 Cup(s) Sun Dried Tomatoes, sliced
- 1/2 Cup(s) Shallots, small dice
- 5 Cup(s) Pomodoro Sauce
- 1 Cup(s) Heavy Cream
- 1/3 Cup(s) Vodka
- 1/3 Cup(s) Fresh Basil, roughly chopped
- 1 To Taste Salt
- 1 To Taste Pepper
- 1/4 Cup(s) Extra Virgin Olive Oil
- 1/2 Cup(s) Romano Cheese, grated
Directions
- Heat a large saute pan on high flame and add 1/3 cup of olive oil
- Once oil is hot, add shallots and prosciutto, cook for 2 minutes
- Add chicken, cook for 5 minutes
- Pull pan off stove, add vodka and place back on stove, vodka will flame
- Add pomodoro sauce, heavy cream, and sun dried tomatoes, cook for 8 - 10 minutes
- Add pasta, cook for 2 minutes then add cheese
- Toss together and place in bowl
- Top with pecorino romano cheese and basil
