Description

This Rigatoni Fresca recipe is a light pasta dish that reminds you of the summer. Simple ingredients tomatoes, basil, olive oil, and cheese.


Ingredients

  • 2  Cup(s) Cherry Tomatoes, halved

  • 3  Table Spoon(s) Olive Oil

  • 4  Each Garlic Cloves, chopped
  • 3
  • 1/4  Cup(s) Grana Cheese, grated
  • 4
  • 2  Pinch Salt
  • 5
  • 1  Pinch Pepper
  • 6
  • 1/4  Cup(s) Fresh Mozzarella Pearls
  • 7
  • 4  Fluid ounce(s) Chicken Stock
  • 8
  • 5  Each Basil Leaves, chiffonade
  • 9
  • 2  Fluid ounce(s) White Wine
  • 10
  • 4  Cup(s) Rigatoni, cooked al dente

  • 1  Pinch Oregano
  • 12

Directions

    1. In a saute pan, heat olive oil
    2. Add garlic, tomatoes, salt and pepper
    3. Add white wine and chicken stock, bring to boil for 2 minutes, then reduce heat
    4. Add rigatoni, basil and fresh mozzarella
    5. Toss and mix to incorporate
    6. Plate up and finish with grated cheese, oregano and parsley
