Directions
- In a saute pan, heat olive oil
- Add garlic, tomatoes, salt and pepper
- Add white wine and chicken stock, bring to boil for 2 minutes, then reduce heat
- Add rigatoni, basil and fresh mozzarella
- Toss and mix to incorporate
- Plate up and finish with grated cheese, oregano and parsley
