Directions
- Wash Beets and coat with olive oil, salt, and pepper
- Place in pan, cover and bake at 325 degrees for 1 hour or until beets are tender
- Let beets lightly cool, wipe skin off with a clean towel and slice 1/4" thick
- In a pot with salted boiling water blanch green beans for 90 seconds, place in ice water to cool
- Toast slices of french bread in hot oil on both sides until golden brown
- Dress beets and green beans with lemon vinaigrette separately and plate them up
- Mix the goat cheese with the chives in a bowl
- Spread the goat cheese on the toasted french bread
- Arrange the goat cheese crostini on the dressed beets and green beans
- Serve and enjoy
