Description

A variety of textures and flavors. Slices of Roasted Beets in a Lemon Vinaigrette with Fresh Green Beans topped with an Herb Goat Cheese Crostini.


Ingredients

  • 3  Each Beets, small
  • 1
  • 1  Table Spoon(s) Olive oil
  • 2
  • 1  Pinch Salt
  • 3
  • 1  Pinch White Pepper
  • 4
  • 14  Each Green Beans
  • 5
  • 3  Table Spoon(s) Goat Cheese
  • 6
  • ½  Tea Spoon(s) Chives, chopped
  • 7
  • 2  Each French Bread, sliced
  • 8
  •  As Needed Lemon Vinaigrette
  • 9

Directions

    1. Wash Beets and coat with olive oil, salt, and pepper
    2. Place in pan, cover and bake at 325 degrees for 1 hour or until beets are tender
    3. Let beets lightly cool, wipe skin off with a clean towel and slice 1/4" thick
    4. In a pot with salted boiling water blanch green beans for 90 seconds, place in ice water to cool
    5. Toast slices of french bread in hot oil on both sides until golden brown
    6. Dress beets and green beans with lemon vinaigrette separately and plate them up
    7. Mix the goat cheese with the chives in a bowl
    8. Spread the goat cheese on the toasted french bread
    9. Arrange the goat cheese crostini on the dressed beets and green beans
    10. Serve and enjoy

    Lemon Vinaigrette

    Ingredients

  • 1 Each Lemon, juiced
  • To Taste Salt & Pepper
  • 1 Tea Spoon(s) Herbs, chopped, your choice
  • 1 Tea Spoon(s) White Wine Vinegar
  • 1 Tea Spoon(s) Dijon Mustard
  • 4 Table Spoon(s) Olive Oil
  • Directions

    1. Mix the lemon juice, salt, pepper, fresh herbs, vinegar, and mustard in a bowl
    2. Slowly add the olive oil while whisking
    3. Taste and adjust with any of the ingredients
