Description
Broccoli rabe sauted in garlic, olive oil and butter. Make this side dish vegetarian by using vegetable stock instead of chicken stock.

Cup(s) Broccoli Rabe, stem ends cut off

one_half Each Garlic Cloves, thinly sliced

Cup(s) Chicken or Vegetable Stock

Directions
- Add broccoli rabe to a large pot of salted boiling water
- boil for about 2 minutes or until stems are tender
- Remove from boiling water and place in an ice bath seasoned with salt to shock
- Drain from ice bath
- Add oil to a large saute pan on medium heat
- Add garlic and saute for about 1 minute, until just lightly colored
- Remove pan from heat and add broccoli rabe
- Add butter and season with salt and pepper
- Bring pan back to flame and add chicken stock
- Stir to combine
- Remove broccoli rabe from pan and plate up
- Pour remaining flavors from pan over broccoli rabe
