Sauteed Broccoli Rabe

Broccoli rabe sauted in garlic, olive oil and butter. Make this side dish vegetarian by using vegetable stock instead of chicken stock.


  • 3  Cup(s) Broccoli Rabe, stem ends cut off
  • 1
  • 2  Table Spoon(s) Extra Virgin Olive Oil
  • 2
  • 1 ½  Each Garlic Cloves, thinly sliced
  • 3
  • 1  Table Spoon(s) Butter
  • 4
  •  To Taste Salt & Pepper
  • 5
  • 1/4  Cup(s) Chicken or Vegetable Stock

    1. Add broccoli rabe to a large pot of salted boiling water
    2. boil for about 2 minutes or until stems are tender
    3. Remove from boiling water and place in an ice bath seasoned with salt to shock
    4. Drain from ice bath
    5. Add oil to a large saute pan on medium heat
    6. Add garlic and saute for about 1 minute, until just lightly colored
    7. Remove pan from heat and add broccoli rabe
    8. Add butter and season with salt and pepper
    9. Bring pan back to flame and add chicken stock
    10. Stir to combine
    11. Remove broccoli rabe from pan and plate up
    12. Pour remaining flavors from pan over broccoli rabe
