Directions
- Rub tuna with olive oil
- In a smoking hot pan, sear both sides well
- Remove tuna from pan
- Dice tuna and dress with soy sauce, sesame oil, rice wine vinegar and sesame seeds
- Mix up tuna and marinade well and adjust with salt and pepper
- Scoop avocado out of skin, add the garlic oil, diced peppers, salt and pepper
- Mash well with a fork and season with salt and pepper to taste
- Place ring mold on plate
- Place tuna mixture inside mold and tap down with a spoon
- Place the avocado mixture on top of the tuna and remove the ring mold
- Garnish with chives and chips or rice crackers
