Sesame Crusted Tuna with a Trio of Asian Sauces

Black and white sesame seared tuna over a seaweed salad with three dipping sauces you can find in your local Asian market or you can substitute the sweet soy sauce with Chef Colin's Citrus Soy Glaze.


  • 8  Ounce(s) Weight Tuna Loin, fresh grade A sushi

  •  As Needed Sweet Soy Sauce (bottled)

  •  As Needed Sriracha Sauce (bottled)

  •  As Needed Wasabi Creme (bottled)

  • 1  Cup(s) Black & White Sesame Seeds
  • 5
  • 1  Table Spoon(s) Sesame Oil
  • 6
  • 1  Cup(s) Seaweed Salad

    1. Heat a thin pizza pan or saute pan over high heat to get smoking hot
    2. Crust tuna loin with sesame seeds, coat evenly on all sides
    3. Once pan is starting to smoke, add sesame oil
    4. Sear tuna quickly on all sides, for rare Sear for about 6 seconds on each side
    5. Remove tuna from pan
    6. Drizzle plate with sweet soy sauce and sriracha sauce
    7. Slice tuna into 8 pieces
    8. Add 1/2 cup of seaweed salad to each plate
    9. Top seaweed salad with 4 slices of tuna on each plate
    10. Drizzle with wasabi creme
