Shrimp Fra Diablo

Description
Sauteed shrimp in a spicy marinara sauce with peppers and onions served over penne pasta.
Ingredients
- 6 Each Shrimp, tails off, peeled, deveined
- 2 Table Spoon(s) Extra Virgin Olive Oil
- ¼ Each Onion, sliced
- ½ Each Red Pepper, sliced
- ½ Each Green Pepper, sliced
- 1 Each Garlic Clove, chopped
- 1/4 Cup(s) Sherry Wine
- 1/4 Cup(s) Clam Juice
- 1 Tea Spoon(s) Corn Starch
- 1/4 Cup(s) Marinara Sauce
- 1 ½ Tea Spoon(s) Oregano, dried
- 1 ½ Tea Spoon(s) Basil, dried
- To Taste Red Pepper Flakes
- 1/4 Pound(s) Penne Pasta, cooked
Directions
- Heat a saute pan on medium high heat
- Add oil to coat pan
- Once oil is hot, add shrimp and saute on each side for about 2 minutes, or until pink
- Add onions and peppers and saute until soft
- Add garlic
- Remove pan from flame and deglaze with sherry wine
- Place pan back on flame
- Add corn starch to clam sauce to thicken, stir until dissolved
- Add clam sauce and marinara sauce to pan
- Stir and let cook for about 1 minute
- Add dried basil, oregano and red pepper flakes
- Taste and season if necessary
- Serve shrimp over penne pasta
