Description

Sauteed shrimp in a spicy marinara sauce with peppers and onions served over penne pasta.


Ingredients

  • 6  Each Shrimp, tails off, peeled, deveined
  • 1
  • 2  Table Spoon(s) Extra Virgin Olive Oil
  • 2
  • ¼  Each Onion, sliced
  • 3
  • ½  Each Red Pepper, sliced
  • 4
  • ½  Each Green Pepper, sliced
  • 5
  • 1  Each Garlic Clove, chopped
  • 6
  • 1/4  Cup(s) Sherry Wine
  • 7
  • 1/4  Cup(s) Clam Juice
  • 8
  • 1  Tea Spoon(s) Corn Starch
  • 9
  • 1/4  Cup(s) Marinara Sauce
  • 10
  • 1 ½  Tea Spoon(s) Oregano, dried
  • 11
  • 1 ½  Tea Spoon(s) Basil, dried
  • 12
  •  To Taste Red Pepper Flakes

  • 1/4  Pound(s) Penne Pasta, cooked

Directions

    1. Heat a saute pan on medium high heat
    2. Add oil to coat pan
    3. Once oil is hot, add shrimp and saute on each side for about 2 minutes, or until pink
    4. Add onions and peppers and saute until soft
    5. Add garlic
    6. Remove pan from flame and deglaze with sherry wine
    7. Place pan back on flame
    8. Add corn starch to clam sauce to thicken, stir until dissolved
    9. Add clam sauce and marinara sauce to pan
    10. Stir and let cook for about 1 minute
    11. Add dried basil, oregano and red pepper flakes
    12. Taste and season if necessary
    13. Serve shrimp over penne pasta
