Smoked Cod and Potato Cakes

Idaho potatoes cooked in milk with smoked cod then mashed and fried. A modern take on an old classic.


  • 1  Each Idaho Potato, peeled, cut into chunks

  • 6  Ounce(s) Weight Smoked Cod or Haddock Filet, sliced same size as potatoes

  • 2  Cup(s) Milk, or to cover
  • 3
  • 1  Table Spoon(s) Parsley, finely chopped
  • 4
  •  To Taste Black Pepper
  • 5
  • 1  Cup(s) Dehydrated Potato Flakes (instant potatoes found in stores)

  • 2  Table Spoon(s) Olive Oil
  • 7
  • 2  Table Spoon(s) Butter

    1. Add potatoes and smoked fish to a large pot
    2. Cover with milk
    3. Cook down on low heat until potatoes are fork tender, about 30 minutes
    4. Remove from pot and strain milk
    5. Add to a mixing bowl and lightly mash with the back of a spoon
    6. Add parsley and black pepper, mix until combined
    7. mix in potato flakes well
    8. Using an ice cream scoop, scoop each portion into desired size
    9. Add oil to a hot saute pan
    10. Add cakes and fry on each side until golden brown
    11. Enjoy!
