Description

Smoked salmon with sweet pea pancakes then topped with a light salad of snow peas, green peas and fresh mint.


Ingredients

  •  As Needed Smoked Salmon
  • 1
  • 8  Each Sweet Pea Pancakes
  • 2
  • 12  Table Spoon(s) Lemon Curd
  • 3
  • 1/2  Cup(s) Snow Peas, julienned
  • 4
  • 4  Table Spoon(s) Green Peas
  • 5
  • 1  Table Spoon(s) Fresh Mint, chopped
  • 6
  • ½  Each Lemon, juiced
  • 7
  • 2  Table Spoon(s) Extra Virgin Olive Oil
  • 8
  •  As Needed Fresh Chives, chopped (for garnish)

Directions

    1. Mix together snow peas, green peas, mint, lemon juice and olive oil
    2. Place slices of salmon on each plate
    3. Place 2 pea pancakes over salmon
    4. Stack salad on top of pancakes
    5. Dollop lemon curd around each plate
    6. Garnish with chives
    7. Enjoy!
