Directions
- Mix together snow peas, green peas, mint, lemon juice and olive oil
- Place slices of salmon on each plate
- Place 2 pea pancakes over salmon
- Stack salad on top of pancakes
- Dollop lemon curd around each plate
- Garnish with chives
- Enjoy!
