Description

Pan seared sea scallops cooked in marinara sauce with arugula.


Ingredients

  • 3  Each Sea Scallops
  • 1
  • 1  Cup(s) Arugula
  • 2
  • 1  Table Spoon(s) Bacon Fat
  • 3
  • 6  Fluid ounce(s) Marinara Sauce, heated up
  • 4
  • 1  Cup(s) Lobster Stock
  • 5
  •  Tea Spoon(s) Extra Virgin Olive Oil
  • 6
  • 1  Each Garlic clove, finely chopped
  • 7
  •  To Taste White Truffle Oil
  • 8
  •  Pinch Salt
  • 9
  •  Pinch Pepper
  • 10

Directions

    1. Pat dry the sea scallops with a paper towel
    2. Season with salt and pepper
    3. In a saute pan, heat bacon fat then add scallops
    4. Sear each side for about 20 seconds
    5. Pour marinara sauce and lobster stock into a blender and puree on low speed
    6. Add the marinara & lobster stock to the scallops, let simmer for 45 seconds
    7. In another pan, sauté the garlic, add arugula, careful not to overcook
    8. Place the scallops in a serving bowl, pour marinara sauce over it and top it with the arugula salad
    9. Drizzle with white truffle oil
