Smoked Seared Scallops

Description
Pan seared sea scallops cooked in marinara sauce with arugula.
Ingredients
- 3 Each Sea Scallops
- 1 Cup(s) Arugula
- 1 Table Spoon(s) Bacon Fat
- 6 Fluid ounce(s) Marinara Sauce, heated up
- 1 Cup(s) Lobster Stock
- Tea Spoon(s) Extra Virgin Olive Oil
- 1 Each Garlic clove, finely chopped
- To Taste White Truffle Oil
- Pinch Salt
- Pinch Pepper
Directions
- Pat dry the sea scallops with a paper towel
- Season with salt and pepper
- In a saute pan, heat bacon fat then add scallops
- Sear each side for about 20 seconds
- Pour marinara sauce and lobster stock into a blender and puree on low speed
- Add the marinara & lobster stock to the scallops, let simmer for 45 seconds
- In another pan, sauté the garlic, add arugula, careful not to overcook
- Place the scallops in a serving bowl, pour marinara sauce over it and top it with the arugula salad
- Drizzle with white truffle oil
