Description

Simple steamed mussels with tomatoes, onions, butter, and wine. A delicious and Fresh dish everyone will Love!


Ingredients

  • 2  Table Spoon(s) Garlic Oil
  • 1
  • 3  Each Garlic Cloves, roasted
  • 2
  • 1/4  Cup(s) Onions, small dice
  • 3
  • 1/4  Cup(s) Peppers, small dice
  • 4
  • ¾  Tea Spoon(s) Tomatoes, small dice
  • 5
  • 20  Each Fresh Mussels, cleaned
  • 6
  • 1/4  Cup(s) White Wine
  • 7
  • 1  To Taste Salt & Pepper
  • 8
  • 1  Table Spoon(s) Butter
  • 9
  • 4  Each Bread, toasted or grilled (for dipping)
  • 10
  •  As Needed Chives, Parsley, Scallions, chopped (for garnish)

Directions

    1. In a pan, add oil and saute onions, peppers and roasted garlic until tender
    2. Add tomatoes, cook for a minute then add mussels
    3. Add wine and cover until mussels open (about 4 minutes)
    4. Season with salt and pepper and toss with butter
    5. Brush bread with oil or garlic oil and grill to make crunchy
    6. Plate up in a bowl
    7. Drizzle chipotle mayo on top and serve with grilled bread

    Chipotle Mayonnaise

    Ingredients

  • 2 Table Spoon(s) Mayonnaise
  • 1 ½ Tea Spoon(s) Chipotle Puree
  • To Taste Salt & Pepper
  • ½ Tea Spoon(s) Vinegar
  • Directions

    1. Puree ingredients together
    2. Taste and season with salt & pepper
