Description
Ths Strawberry Sabayon recipe contains egg yolks whisked together with Madeira wine, vanilla extract and sugar then folded in with whipped cream and layered with strawberries.

Directions
- Place a clean stainless steel bowl in boiling water or a double boiler
- Add sugar, vanilla and madeira wine to bowl
- Whisk to let sugar dissolve into liquid
- Remove bowl from boiling water
- Add egg yolks and Whisk thoroughly to thicken
- Continuously Whisk until eggs reach a nappe consistency
- Once thickened, add bowl back to boiling water and continue to Whisk
- Turn off heat and Whisk
- Place bowl in an ice bath and Whisk to bring down temperature
- Fold in whipped cream
- In a chilled glass, layer sabayon with strawberries and garnish with mint
