Description

This tantalizing blend of seared chicken sauteed vegetables simmered in a Thai green chili sauce is delightful. Serve it with a bowl of jasmine rice. You will love it.


Ingredients

  • 10  Ounce(s) Weight Chicken Breast, cubed
  • 1
  • 2  Table Spoon(s) Oil, neutral
  • 2
  • 1/2  Cup(s) Onion, large dice
  • 3
  • 1/3  Cup(s) Red Bell Pepper, large dice
  • 4
  • 1/3  Cup(s) Zucchini and Yellow Squash, strips
  • 5
  • 2/3  Cup(s) Broccoli Florets, blanched
  • 6
  • 1/3  Cup(s) Coconut milk
  • 7
  • 1 1/2  Cup(s) Thai Green Curry Sauce (See recipe on Idealchef)

  • 1  Each Sprig Cilantro for garnish

Directions

    1. Heat oil in a thick bottom saute pan
    2. When oil is hot, add cubed chicken and sear until golden brown on all sides
    3. When chicken is browned on all sides, remove from pan
    4. In same pan saute off onions, peppers and squash until they get some color
    5. Add the broccoli
    6. Add the Thai Green Curry sauce
    7. Finish with a little coconut milk if needed
    8. Taste and adjust seasoning if needed with salt and pepper
