This Thai Green Curry Sauce is great for mixing in with your favorite vegetable, chicken, or shrimp stir fry. This blend of Curry paste, Coconut milk, and Stock is delicious and tangy. See how easy it is to make with Chef Faith.


  • 2  Table Spoon(s) Grape Seed Oil

  • 1/3  Cup(s) Green Chili Paste

  • 2 ½  Table Spoon(s) Sugar
  • 3
  • 2  Table Spoon(s) Thai Fish Sauce
  • 4
  • 1  Cup(s) Chicken Stock
  • 5
  • 12  Fluid ounce(s) Coconut milk
  • 6
  • ¼  Tea Spoon(s) White pepper
  • 7
  • 1  Tea Spoon(s) Corn starch
  • 8
  • 2  Fluid ounce(s) Coconut milk

    1. Heat oil in a thick bottom sauce pot
    2. Add chili paste and cook out until the oil turns emerald green
    3. Add chicken stock, coconut milk, fish sauce, sugar and white pepper
    4. Let simmer so all flavors will meld together, 8 minutes or so
    5. Prepare the slurry by mixing the corn starch with the extra coconut milk until smooth
    6. Pour the slurry into the sauce pot, allow to simmer for 3 minutes, it should thicken to desired viscosity
    7. You may add more slurry if sauce is not thick enough
    8. Taste and adjust seasoning if needed
