Directions
- In a bowl, mix mayo, egg, ketchup, relish, sour cream, olive oil and parsley, let sit for 10 minutes
- On one side of each slice of rye bread, spread butter
- Heat a nonstick pan over medium heat, brown the bread lightly butter side down in the pan, remove bread and place on a cutting board
- On each piece of bread, place 1-1/2 slices of Swiss
- Divide the sauerkraut and corned beef evenly among the 4 slices of bread, spread a thin layer of the dressing on the other slices of bread, stack to form the sandwich
- Place sandwiches in a 300 degree oven to warm through and melt the cheese, about 7 minutes
