Chef Jerry's Tomato and Mozzarella Salad contains marinated ciliegine (small Mozzarella balls) tossed with toasted garlic, olive oil and grape tomatoes then topped with basil and sliced prosciutto.


  • 10  Each Grape Tomatoes, halved lengthwise

  • 3  Table Spoon(s) Olive Oil

  • 1  Each Garlic Cloves, thinly sliced
  • 3
  • 10  Each Ciliegine Cheese (Mozzarella balls)
  • 4
  • ½  Tea Spoon(s) Red Pepper Flakes (or more if desired)

  • 3  Each Basil Leaves, chiffonade
  • 6
  •  To Taste Salt & Pepper

  • 1  Table Spoon(s) Parmesan Cheese, grated
  • 8
  • 1  Each Prosciutto Slice, chiffonade
  • 9
  •  As Needed Extra Virgin Olive Oil (for plating)

  •  As Needed Balsamic Vinegar, good quality (for plating)

    1. Heat 2 tablespoons of olive oil in a saute pan
    2. Add garlic and saute until lightly golden brown, being careful not to burn
    3. In a stainless steel mixing bowl, toss tomatoes with toasted garlic and oil from pan
    4. Add mozzarella to another stainless steel bowl and toss with 1 tablespoon of olive oil, red pepper flakes and half of the basil chiffonade
    5. Season with salt and pepper
    6. Drain off excess oil from the tomatoes and garlic and add to the mozzarella
    7. mix in with parmesan cheese, tossing well to combine
    8. Plate up and top with prosciutto and remaining basil
    9. Drizzle plate with extra virgin olive oil and balsamic vinegar to finish
