Description

This potatoes are to die for. Boiled red potatoes mashed with sauteed celery, carrots and onions then finished with heavy cream, butter and Parmesan cheese.


Ingredients

  • 3  Quart(s) Red Potatoes, halved
  • 1
  • 1  Cup(s) Celery, diced
  • 2
  • 1  Cup(s) Carrots, diced
  • 3
  • 1  Cup(s) Onions, diced
  • 4
  • 1  Pound(s) Butter, room temperature
  • 5
  • 1  Cup(s) Heavy Cream
  • 6
  • 1/4  Cup(s) Parmesan Cheese
  • 7
  •  To Taste Salt & Pepper
  • 8
  • 1  Table Spoon(s) Garlic, minced
  • 9

Directions

    1. Boil potatoes in a large pot of salted boiling water for about 30 - 35 minutes
    2. Once fork tender, strain thoroughly and place in a large mixing bowl
    3. Add 1/4 pound of butter to a saute pan and let melt
    4. Add carrots, celery and onions and let sweat out until tender without obtaining any color, about 15 - 20 minutes
    5. Add to potatoes
    6. In another saute pan, add 1/4 pound of butter and let melt
    7. Add garlic and lightly sweat out on medium heat for about 5 minutes, until golden color
    8. Add to potatoes
    9. Mash ingredients together then add heavy cream and Mash again
    10. Finish with parmesan cheese and Mash
    11. Taste and season with salt and pepper
