Description
Great Vanilla Cupcakes, moist and delicious. This is the ultimate in cupcake recipes. Add a bit of melted chocolate to make them chocolate cupcakes. Decorate anyway you wish. (Serving size is based on 1 cupcake per person).

Directions
- Preheat oven to 350 degrees
- Cream butter in a mixing stand with the paddle attachment on medium high speed
- As the butter is creaming, gradually add sugar and vanilla extract
- Increase the speed to high, add eggs one at a time
- Once fully incorporated, scrape down sides of bowl with a rubber spatula, mix again
- Turn off mixer and add flour, mix on medium
- As it's pulling together, turn off machine, add baking powder
- mix on low speed for about 1 minute or until fully combined
- Slowly add in milk
- Scrape down bowl and paddle, mix again quickly on high
- Using an ice cream scoop, fill each paper lined cupcake mold 3/4 full with cupcake batter
- For normal cupcake size bake for 25 minutes, for mini cupcakes bake for 15 minutes
- You can tell if they're done by the touch, if they bounce back they're done
Note: For chocolate cupcakes, add 1 cup melted semi-sweet chocolate after adding sugarĀ & before adding eggs
