A riff on traditional fried rice that contains no animal products. Absolutely delicious!!!

Cup(s) Peas, frozen or fresh (blanched if fresh peas)

Each Baked Tofu Brick, cubed

Cup(s) Rice, cooked (jasmine would be perfect)

Table Spoon(s) Tamari or Soy Sauce

Directions
- Heat the oil in skillet (or wok) over high heat and add ginger and garlic, cook until aroma hits your nose
- Add tofu and saute until nicely browned, about 5 minutes
- Take off heat, add the red curry paste and cook out
- Deglaze with soy sauce and bring to a simmer
- Add the rice a bit at a time breaking up any clumps with your fingers and tossing it with the sauce in the pan
- Add the peas and carrots to the pan, turn off heat and add in cilantro (or scallion)
- Season with salt and pepper if desired. Serve on a plate and top with peanuts
