Vegan Vietnamese Summer Rolls

Description
This is a tasty and healthy hors d'oeuvre or appetizer filled with your favorite vegetables wrapped in a spring roll wrapper. No cooking required.
Ingredients
- 2 Each Spring Roll Wrappers
- 1 As Needed Water, for soaking
- 1/3 Cup(s) Carrots, julienne
- 1/3 Cup(s) Cucumbers, julienne
- 1 Cup(s) Baby Arugula
- 1/4 Cup(s) Cilantro, roughly chopped
Directions
- Soak spring roll wrappers in water for 30 seconds
- Place on board and place in vegetables as desired
- Fold over sides and roll up tight
- For Dip: add mayonnaise with the sriracha sauce and lime juice
- Mix well and place in bowl
- Cut up spring roll to desired size and serve with dip
- 1 Cup(s) Mayonnaise or Vegennaise
- 1 Table Spoon(s) Sriracha Hot Sauce
- ½ Each Lime, juiced
- In a mixing bowl, mix together mayonnaise, sriracha sauce and lime juice
