Description

This is a tasty and healthy hors d'oeuvre or appetizer filled with your favorite vegetables wrapped in a spring roll wrapper. No cooking required.


Ingredients

  • 2  Each Spring Roll Wrappers
  • 1
  • 1  As Needed Water, for soaking
  • 2
  • 1/3  Cup(s) Carrots, julienne
  • 3
  • 1/3  Cup(s) Cucumbers, julienne
  • 4
  • 1  Cup(s) Baby Arugula
  • 5
  • 1/4  Cup(s) Cilantro, roughly chopped
  • 6

Directions

    1. Soak spring roll wrappers in water for 30 seconds
    2. Place on board and place in vegetables as desired
    3. Fold over sides and roll up tight
    4. For Dip: add mayonnaise with the sriracha sauce and lime juice
    5. Mix well and place in bowl
    6. Cut up spring roll to desired size and serve with dip

    Chili Aioli

    Ingredients

  • 1 Cup(s) Mayonnaise or Vegennaise
  • 1 Table Spoon(s) Sriracha Hot Sauce
  • ½ Each Lime, juiced
  • Directions

    1. In a mixing bowl, mix together mayonnaise, sriracha sauce and lime juice
