Description

This is a delicious vegetable tart. It can be made many different ways. The key to the preparation is in the parmesan base and the Cauliflower puree.


Ingredients

  • 4  Each Parmesan Disks
  • 1
  • 1  Each Cauliflower, head

  • 1  As Needed Cream
  • 3
  • 1  Table Spoon(s) Butter
  • 4
  • 1  To Taste Salt and Pepper

  • 1 1/2  Cup(s) Assorted Seasonal Vegetables, cooked and raw
  • 6
  • 1/2  Cup(s) Micro Greens
  • 7
  •  Tea Spoon(s) Dressing
  • 8
  • 1  Fluid ounce(s) Hazelnut oil
  • 9
  • 2  Fluid ounce(s) Sunflower oil
  • 10
  • 1  Fluid ounce(s) Cider Vinegar

  • 1  Each Orange zest of all, juice of half

Directions

    1. Cook cauliflower in cream until soft
    2. Mash by hand and adjust with butter the cooking liquid salt and pepper
    3. Leave a little texture in the Mash
    4. Place the finished cauliflower Mash on the center of a parmesan disk
    5. Layer the vegetables over the Mash, do not press down you want to build this dish and create a balanced look
    6. Top with dressed micro greens and drizzle the remaining dressing around the plate
    7. This dish can also be made with guacamole
