Description

Chef Paul's vodka sauce is a creamy pink sauce that your friends and family will love. Add a little penne for a great penne ala vodka. A little vodka never hurts anyone..


Ingredients

  • 4  Fluid ounce(s) Olive Oil
  • 1
  • 1 1/2  Quart(s) Heavy Cream
  • 2
  • 2  Quart(s) Plum Tomatoes, canned good quality
  • 3
  • 1/2  Pound(s) Prosciutto, diced
  • 4
  • 1  Each Parmesan Cheese or Grana Padano Rind
  • 5
  • 1  Cup(s) Onion, diced
  • 6
  • 1/2  Cup(s) Garlic, chopped
  • 7
  • 5  Each Fresh Basil Leaves
  • 8
  • 4  Fluid ounce(s) Vodka
  • 9
  • 1  Tea Spoon(s) Black Pepper, freshly ground

  • 2  Cup(s) Parmesan, grated

Directions

    1. Heat olive oil in a large heavy bottom pot on medium high heat
    2. Add onion and sweat for 3 minutes, add chopped garlic and sweat for 3 minutes more.
    3. Add prosciutto and stir to incorporate, add vodka and cook for 3 minutes
    4. Add plum tomatoes, crushing by hand or break them up before adding to pot
    5. Let the sauce come to a simmer, add cream and rind of Parmesan cheese
    6. Cook sauce for one hour, adjust seasoning with salt & pepper, rip up basil and add to sauce, remove cheese rind
    7. f you want the sauce to be smoother, you can blend the sauce with an immersion blender or divide sauce in quarters and puree in a blender
