Description

Hearty side dish for meats, chicken, or seafood. Simmered white beans and mushrooms in chicken stock and aromatics. Flavorful and creamy.


Ingredients

  • 1  Table Spoon(s) Blended Oil (Extra Virgin Olive Oil & Canola Oil)

  • 2  Table Spoon(s) Shallots, sliced thin
  • 2
  • 1  Each Garlic clove, slice thin
  • 3
  • ¼  Cup(s) Oyster Mushrooms, rough chop
  • 4
  • ¼  Cup(s) Maitake Mushrooms, rough chop
  • 5
  • ¾  Cup(s) White Beans, cooked
  • 6
  • 1 ½  Cup(s) Chicken Stock
  • 7
  • 1  To Taste Salt, kosher
  • 8
  • 1  To Taste Pepper

  • 2  Table Spoon(s) Butter

Directions

    1. Heat pan and add oil saute the sliced onions and garlic
    2. Add the mushrooms and cook out until you get a little color and mushroom liquid has dried up
    3. Add the white beans and season with salt and pepper Taste
    4. Add the chicken stock and reduce to a ragout consistency taste and adjust with salt and pepper
    5. Finish with butter and taste before serving
