How to clean and season a whole branzini (Mediterranean sea bass) to perfection for grilling or roasting. This is a great branzini recipe.

Each Whole Branzini (Mediterranean Sea Bass)

As Needed Greens (for garnish)

Directions
- Scale the fish and wash with cold water
- Cut the fish down the belly and clean out all innards and wash with cold water
- Put sliced lemon, thyme and garlic in fish belly
- Season outside of fish liberally with the spices, if you do not have the spices recommended in recipe salt and pepper will do
- On a hot clean grill, mark fish on both sides then finish in oven for 18 minutes
- Check for doneness by pulling out back fin bone
- Place on serving dish or back into skillet
- Dress with wine and garnish with greens if desired
