Description

How to clean and season a whole branzini (Mediterranean sea bass) to perfection for grilling or roasting. This is a great branzini recipe.


Ingredients

  • 1  Each Whole Branzini (Mediterranean Sea Bass)
  • 1
  • ½  Each Lemon
  • 2
  • 3  Each Thyme Sprigs
  • 3
  • 2  Each Garlic Cloves, crushed
  • 4
  • 1  As Needed Salt and White Pepper
  • 5
  • 1  As Needed Orange Powder
  • 6
  • 1  As Needed Fennel Pollen
  • 7
  • 1  As Needed Lemon Salt
  • 8
  • 2  Fluid ounce(s) White Wine
  • 9
  • 1  As Needed Greens (for garnish)

Directions

    1. Scale the fish and wash with cold water
    2. Cut the fish down the belly and clean out all innards and wash with cold water
    3. Put sliced lemon, thyme and garlic in fish belly
    4. Season outside of fish liberally with the spices, if you do not have the spices recommended in recipe salt and pepper will do
    5. On a hot clean grill, mark fish on both sides then finish in oven for 18 minutes
    6. Check for doneness by pulling out back fin bone
    7. Place on serving dish or back into skillet
    8. Dress with wine and garnish with greens if desired
